Chicken Aspic

ingredients

  • 1 Large 5lb. Hen, cooked with water, 1 Large onion, 1 Tbs. salt, and celery tops)
  • 2 Slices Pimento per mold
  • 3 enveloped geleatin, unflavored
  • 1 Cup thinly sliced Almonds (Cut lengthwise)
  • 1 Cup Mayonnaise
  • Juice of 2 Lemons
  • 2 Tbs. Durkees Dressing
  • Shake of Pepper
  • Salt to taste
  • 1/2 Cup cold water
  • 4 Cups Chicken Broth, from cooking the hen
  • 2 Cups Celery, finely chopped

directions

Dissolve 3 envelopes gelatin in 1/2 cup cold water. Add to 4 cups of hot chicken broth. Mix together cut up chicken, celery, lemon juice, dressing, mayonnaise, and almonds. Add to gelatin mixture and combine. Put strips of pimento crossed on the bottom of each mold. Fill with salad. Chill to thicken.
