Chipotle-Lime Salmon with Peppers and Onions

ingredients

  • 1 red, orange, and yellow pepper
  • 1 medium sized onion
  • 2 half pound salmon filets
  • 2 limes
  • ground chipotle pepper
  • olive oil
  • salt
  • box of Spanish rice
  • 2 tbsps butter

directions

Preheat oven to 500 degrees. Make Spanish rice following directions on the box. Cut up peppers and onions into long, thin slices and place on the bottom of baking pan. Drizzle olive oil all over and sprinkle with salt and chipotle pepper. Next, place salmon filets on top of peppers and onions. Generously sprinkle chipotle pepper over filets. Then roll limes, cut in half, and squeeze over filets--one lime per filet. Put butter in a drinking cup and microwave for 13 seconds. Drizzle butter over salmon filets. Put baking pan in oven for 15 minutes or until the color of the salmon is translucent pink. Serve over Spanish rice.
