Shrimp with Tomatoes and Feta
This is great as an appetizer or makes an excellent and easy main dish.
ingredients
- 3 tablespoons olive oil
- 2 medium onions, thinly sliced
- 3 cloves garlic, peeled and chopped
- 4 large ripe tomatoes, skinned
- 1 bay leaf
- 2 teaspoons dried oregano, salt, pepper, and sugar to taste
- 1 pound large deveined shrimp, shell off
- 3/4 pound feta

Heat the oil in a shallow pan and gently saute the onions and garlic in it for 3-4 minutes. Add the tomatoes, bay leaf, and oregano and simmer over medium heat for 10-20 minutes, seasoning to taste with salt, pepper, and if necessary, a little sugar.

During the last few minutes, preheat the broiler.

When the sauce thickens, add the shrimp and cook for 2 minutes or until they have just turned pink. Crumble the feta over the top and cook under the broiler for 4-5 minutes or until the bits of feta are touched with gold and brown patches.
