Leb. Salad - Tabbouleh
I’ve modified the original recipe for my family’s personal tastes. The original recipe calls for chopped green onion and a little crushed dried mint (I omit these ingredients).
ingredients
- 1 C cracked wheat (medium or large)
- 2 - 3 chopped fresh tomatoes
- 1 C finely chopped parsley
- Fresh lemon juice
- Salt
- Olive oil
- Green onions, chopped (optional)
- 2 T crushed dried mint (optional)
directions
Place cracked wheat in medium bowl and add lukewarm water. Let soak for about an hour, drain and squeeze a little to remove excess water. Add parsley, until it looks right (pretty green). Add tomatoes and salt to taste. Add the juice of one lemon at a time....stir and taste. Continue adding lemon and salt until it tastes right. Finally add a little olive oil, just to make it a little smoother and take the edge off the lemon juice. Chill...
