Tatziki Dip
Serve this as a dip with pita chips or as a condiment to souvlaki. Or both!
ingredients
- 1 Large cucumber
- 3/4 C plain, fat free yogurt
- 3/4 C lite sour cream
- 3 Tbs extra virgin olive oil
- 4 tsp minced fresh dill, mint or parsley
- 4 tsp red wine vinegar
- 3 garlic cloves, minced
- 1/4 tsp salt

Peel cucumber. Cut in half length wise and scoop out the seeds. Grate 1/2 to 3/4 of the cucumber. Small dice the rest. Place in a strainer and sprinkle with kosher salt. Toss and let drain while you prepare the rest of the remaining ingredients

Stir together the yogurt, sour cream and remaining ingredients. Squeeze out as much juice as possible from the cucumber and add to the yogurt mixture.

Refrigerate until ready to serve.

Make ahead and refrigerate for best flavor.
