Ken's Bolognese Sauce

ingredients

  • 4 Tablespoons extra virgin olive oil
  • 2 cups coarsely diced sweet onions (Maui, Vidalia), about two or three large onions
  • 3 tablespoons finely minced fresh garlic
  • 1 Tablespoon dried basil
  • 1 Tablespoon dried oregano
  • 2 lbs. lean ground beef
  • 4 15 ounce cans of tomato sauce
  • 2 6 ounce cans of tomato paste
  • salt and fresh ground pepper to taste

    Use a large pot that can brown the onions, meat etc.

  • 2

    Saute the onions in the olive oil over medium heat until lightly browned

  • 3

    Add garlic, basil, oregano, and several grindings of fresh black pepper

  • 4

    Add ground beef, turning up heat to medium high and saute until the meat is just cooked through

  • 5

    Add the tomato sauce and tomato paste- stir constantly until blended

  • 6

    Simmer for 60-90 minutes, stirring every 15 minutes or so

  • 7

    Salt and pepper to taste. if at all bitter add a bit of sugar
