Ken's Bolognese Sauce
ingredients
- 4 Tablespoons extra virgin olive oil
- 2 cups coarsely diced sweet onions (Maui, Vidalia), about two or three large onions
- 3 tablespoons finely minced fresh garlic
- 1 Tablespoon dried basil
- 1 Tablespoon dried oregano
- 2 lbs. lean ground beef
- 4 15 ounce cans of tomato sauce
- 2 6 ounce cans of tomato paste
- salt and fresh ground pepper to taste

Use a large pot that can brown the onions, meat etc.

Saute the onions in the olive oil over medium heat until lightly browned

Add garlic, basil, oregano, and several grindings of fresh black pepper
- 4
Add ground beef, turning up heat to medium high and saute until the meat is just cooked through
- 5
Add the tomato sauce and tomato paste- stir constantly until blended

Simmer for 60-90 minutes, stirring every 15 minutes or so

Salt and pepper to taste. if at all bitter add a bit of sugar
