These are wonderful desserts. Once frozen, they may be moved from the muffin tins to a covered container and stored for several weeks. I stab a fork into one, fresh from the freezer, and eat it “Popsicle style”. These are such a refreshing dessert / snack in the summer.

ingredients

  • 8 oz. sour cream
  • 1 C sugar
  • 3 T lemon juice
  • 6-7 bananas - sliced
  • 1/2 - 3/4 C pecans, chopped (cookie pieces)
  • 1 sml can crushed pineapple, drained
  • Frozen strawberries, cut into small pieces
  • 1/2 t cinnamon

directions

Mix all ingredients. Spoon into muffin tins and freeze overnight.

notes

To make them more “diet friendly”, use fat free sour cream, Splenda and sugar free pineapple.
