Fresh Squash
ingredients
- 4 slices center cut low fat bacon
- 1 can diced tomatoes (regular, chili or chipotle)
- 1-2 yellow squash, sliced in 1/8“ - 1/4” slices
- 1-2 zucchini squash, sliced in 1/8“ - 1/4” slices
- Salt and pepper to taste
directions
Slice and crosscut bacon into small pieces. Cook in skillet until most of fat is cooked out but bacon isn’t too crunchy. Add all squash and tomatoes. Season to taste. Cover and simmer/steam on medium low until squash in tender.
