Sweet Bread - Pumpkin Bread
Easy “dump” recipe that is a hit with everyone, even people who claim not to like pumpkin.
ingredients
- 4 eggs
- 1 C oil
- 1/2 C water
- 2 C pumpkin (1 16 oz can)
- 3 C sugar
- 1 1/2 t salt
- 2 t soda
- 1 t cinnamon
- 3 1/2 C flour
- 1 C nuts (optional)

Dump all ingredients into large mixing bowl and blend together by hand or with mixer until thoroughly blended and smooth.

Pour into 2 greased and floured loaf pans.

Bake at 350 degrees for 1 hour. To test if done, toothpick inserted in center should come out clean....top center of loaf should spring back when depressed. Cool in pan for about 15 minutes....remove from pan and continue to cool on wire rack. If loaf seems a little dry or overcooked, wrap in foil while still warm and refrigerate.

Excellent when warm and fresh out of the oven but is wonderful cold as well. Serve with a strawberry cream cheese spread or plain.
