Tuscan Style Soup
ingredients
- 1 large can of diced tomatoes
- 2-3 ripe tomatoes
- 2 yellow squash, cubed
- small container of fresh mushrooms
- 1 eggplant, cubed
- 2 cans low sodium chicken broth
- Garlic powder
- Italian Seasonings
- Salt and pepper to taste
directions
Bring to a boil and simmer until vegetables are tender. Delicious and only has about 60 calories. When ready to eat, put some shredded low fat cheese on it.
