Pumpkin Hummus, Caramelized Onion and Cheese Pizzas
ingredients
- 2 tbsp olive oil, or as needed
- 1 onions thinly sliced
- 2 tablespoon brown sugar
- 2-3 tbsp balsamic vinegar
- 1/2 pound bacon
- 2-3 large pieces of flatbread
- 12 oz. hummus
- 6 oz pumpkin puree
- 2 Granny Smith apples - peeled, cored and
- cut into matchsticks
- 2 cups shredded fontina (or mozzarella) cheese
directions
1.Preheat an oven to 375 degrees F (190 degrees C).
2.Heat the olive oil in a large saucepan over medium heat. Add the onions; cook and stir until they turn soft and begin to turn golden brown, about 10 minutes. Stir in the brown sugar, and continue cooking and stirring until the onions are deep brown, about 10 minutes more. Pour in the balsamic vinegar, and simmer until the vinegar has reduced and become syrupy.
3.Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until crisp and evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate then crumble and set aside. Or cook bacon in microwave.
4.In medium size bowl, combine hummus with pumpkin puree. Mix well. (If using store-bought hummus, just by whatever size is available and add half as much pumpkin pureeā¦note: make sure you use pumpkin puree and NOT pumpkin pie filling)
5.To assemble the pizzas, spread each piece of flatbread with pumpkin hummus and place onto a baking sheet. Sprinkle with the caramelized onions, apple and crumbled bacon. Finally, sprinkle with cheese.
6.Bake in the preheated oven until the pizza is hot and the cheese is bubbly and golden brown, about 10 minutes.
