***Some hints: Use a big pan. Like caramel, this recipe doubles in size when it’s boiling/simmering so you need to have a big pan. And stir continuously. Also, when you pour into the other ingredients, stir it all together for a LONG time. It will seem grainy and like it’s not going to mix together well, but all the sudden, it will turn into a very smooth and creamy looking mixture. Line your pan you are pouring the mixture into with parchment or wax paper. Then when you are ready to cut the fudge, pull the sides up on the paper and take the entire brick of fudge out, set it on the counter and let it warm for about 10 minutes and then cut with a very thin knife (like the Pampered Chef paring knife).***
