Spinach Balls
ingredients
- 2 pkg frozen chopped spinach (cooked & drained)
- 1 lrg onion (chopped)
- 4 beaten eggs
- 3/4 cup butter, melted
- 1 tsp salt
- 1/2 cup parmesan cheese
- 2 cups Pepperidge farm herb stuffing mix

Combine all ingredients and mix well.

Chill for one hour.

Roll into small balls and bake @350 for 10-15 minutes.

About 60 balls walnut size.
*Note* Onions can be sauté in butter first to soften them and they won’t taste so hard & raw.
