Spinach Balls

ingredients

  • 2 pkg frozen chopped spinach (cooked & drained)
  • 1 lrg onion (chopped)
  • 4 beaten eggs
  • 3/4 cup butter, melted
  • 1 tsp salt
  • 1/2 cup parmesan cheese
  • 2 cups Pepperidge farm herb stuffing mix

    Combine all ingredients and mix well.

    Chill for one hour.

  • 3

    Roll into small balls and bake @350 for 10-15 minutes.

  • 4

    About 60 balls walnut size.

*Note* Onions can be sauté in butter first to soften them and they won’t taste so hard & raw.
