Roast Beef and Vegetables
ingredients
- 1 beef roast
- Salt
- Pepper
- 2-3 Bay leaves
- 1 large onion
- 1/2 Cup pickle juice (any variety)
- 1-4 Cups leftover Coffee
- Carrots, cut into large pieces
- Potatoes, cut into large pieces.
directions
In ovenproof pan, brown beef roast on all sides. Add onion and cook until almost tender. Add all other ingredients. Cook in oven at 350 Degrees F until done.
1 Hour before serving, remove lid and add Carrots and Potatos.
