Texas Beef Skillet
ingredients
- 1 pound ground beef
- 3/4 cup chopped onions
- 1 can (14.5 oz.) diced tomatoes
- 1 can (15 oz.) kidney beans
- 1/2 cup one-minute rice
- 3 tablespoons chopped green peppers
- 1 1/2 teaspoon chili powder
- 1/2 teaspoon garlic salt
- 3/4 cup shredded cheese (cheddar or jack)
directions
In a skillet, cook ground beef and onion till meat is browned and onion is tender. Drain off fat. Stir in undrained tomatoes, undrained beans, uncooked rice, and rest of ingredients, except cheese. Bring to a boil then reduce heat, cover, and simmer for about 20 minutes, stirring occasionally. Remove from heat and top with cheese. Cover for about 3 minutes or until the cheese melts. Serve with corn chips, if desired.
* For variety, try a can of three-bean salad in place of the kidney beans.
