Easy Dinner Party Recipe

ingredients

  • 1 - 1.5 lb. fresh wild sockeye salmon fillet
  • Juice from one large lemon (approx. 3 Tbsp.)
  • 1/4 cup brown sugar
  • 2 Tbsp. butter, melted (mixed use)
  • Dash - fines herbes
  • Dash - dried dill weed
  • 1-2 lemons for serving

directions

Preheat oven to 375. Wash and dry the salmon, set aside. Stir together lemon juice, brown sugar and 1 Tbsp of the melted butter. Pour into a rectangular or oblong baking dish, large enough to hold the uncut fillet. Place the fillet on top of the juice, skin side up. Bake, uncovered for 10 minutes.

Remove from oven and turn fillet, carefully. Mix the remaining 1 Tblsp melted butter with the herbs and drizzle over the salmon. Spoon pan juices over fillet. Bake for 10-15 minutes until the fillet flakes with a fork, basting occasionally.

Remove from pan and place on serving platter. Baste with pan juices. Serve 1/2 lemon to each person, for squeezing on fish.
