Chicken Tortilla Soup

ingredients

  • 1 onion chopped
  • 1 T chopped garlic
  • 1 15-1/2 oz. can Mexican style stewed tomatoes
  • 1 15-1/2 oz. can black beans beans, rinsed
  • 1 15-1/2 oz. can chili beans
  • 2 cups frozen corn
  • 1 can rotel tomatoes
  • 1 envelope taco seasoning mix
  • 1 envelope ranch dressing mix
  • 2 cans water
  • 2-3 cups cooked chicken cubed

directions

Saute onion and garlic in olive oil until onion is transparent. Stir in all other ingredients. Bring to a boil, cover, and turn down to a simmer for 30 minutes or until needed. Can simmer for 1 hour.

Serve with sour cream, shredded cheese, and tortilla chips.
