Chicken Tortilla Soup
ingredients
- 1 onion chopped
- 1 T chopped garlic
- 1 15-1/2 oz. can Mexican style stewed tomatoes
- 1 15-1/2 oz. can black beans beans, rinsed
- 1 15-1/2 oz. can chili beans
- 2 cups frozen corn
- 1 can rotel tomatoes
- 1 envelope taco seasoning mix
- 1 envelope ranch dressing mix
- 2 cans water
- 2-3 cups cooked chicken cubed
directions
Saute onion and garlic in olive oil until onion is transparent. Stir in all other ingredients. Bring to a boil, cover, and turn down to a simmer for 30 minutes or until needed. Can simmer for 1 hour.
Serve with sour cream, shredded cheese, and tortilla chips.
