Indian Basmati Rice
Basic but delicious Indian-style rice.
ingredients
- 2 cups basmati rice
- 1 stick cinnamon
- 1 bay leaf
- 3 green cardamon
- 1 tsp. whole cumin seeds, or to taste
- 2 Tbsp. vegetable oil
- 3 cups water
- 1-2 tsp. salt (to taste)

Soak the rice in water to cover for one hour, then drain.

Heat oil in a large heavy bottomed pot or saute pan over medium-high heat. When hot, add cinnamon, bay leaf and cardamon and saute until they begin to brown, 2-3 minutes.

Add cumin seeds and a few seconds later add the water and the salt. Add the rice and bring to a boil while stirring.

Continue to stir the rice mixture until it reaches the consistency of a thick porridge (5 or so minutes). Reduce the heat to low and cover the pot.

Cook for 5 minutes on low and then remove the pot from the heat and let it sit without removing the cover for 15 minutes.

Fluff gently with a fork and serve.
