Curry - GF Winter, Veggie
ingredients
- 2 Tblsp. peanut oil
- 1 large onion, chopped in large pieces
- 2 tsp. fresh ginger, grated
- 1 tsp. curry powder
- 1 tsp. salt
- dash - pepper
- 1/2 tsp. ground ginger
- 1/3 tsp. cumin powder
- dash - cayenne
- 2 bay leaves
- 2 medium carrots, sliced thickly on a diagonal
- 1/2 pound baby peas, frozen
- 1 red bell pepper, cut into large (bite size) chunks
- 1/2 small cauliflower, separated into pieces
- 1/2 pound potatoes, peeled and cut into 1 inch chunks
- 1/2 pound butternut squash, peeled and cut into 1 inch chunks
- 1 cup water
- Basmati or Saffron Rice, cooked, for serving
