Wild Rice Salad - Pecan Orange Mint

Makes 6 servings

ingredients

  • 1 cup uncooked wild rice
  • 1 cup yellow raisins
  • 1/4 cup fresh mint, chopped
  • 4 green onions, thinly sliced
  • 1/4 cup olive oil
  • juice and zest from one large orange
  • 1 cup pecan pieces
  • dash salt & pepper

directions

Rinse the rice and cook until tender (use 5 1/2 cups water and simmer uncovered for about 45 minutes or by package directions). Drain.

Place rice in a refrigerator safe bowl, add raisins, mint, onions, olive oil, orange juice and zest. Cover and cool in refrigerator for at least two hours.

Just before serving, stir in pecan pieces, salt, pepper, and additional oil if needed.
