Pancakes - Wild Rice
ingredients
- 2 eggs
- 4 Tblsp. buttermilk powder
- 1 cup water
- 1/2 tsp. baking soda
- 1 1/4 cups all purpose flour
- 1 tsp. baking powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 2 Tblsp. peanut oil
- 1 cup cooked wild rice*
- rice can be cooked ahead and kept in refrigerator
directions
Using a large batter bowl, mix together eggs, buttermilk powder, water and baking soda. Mix with a wire whisk until smooth.
In another bowl, stir together flour, baking powder, sugar and salt. Add this to the egg mixture and stir until just blended. Stir in oil and cooked wild rice.
Using a 1/3 cup dry measure, pour batter for each pancake onto a hot griddle or frying pan. Turn over when the pancake puffs, gets bubbles and browns on edges. Cook through.
Makes about 10 pancakes

Serve immediately with Vermont Maple Syrup and butter.
