Baked Red Snapper with Tomato, Orange and Saffrom
ingredients
- 4 plum tomatoes, chopped
- 1/4 finely chopped onion
- 1/4 cup orange juice
- 3 tablespoons dry white wine
- 1 garlic clove, minced
- 1 teaspoon grated orange peel
- Pinch of saffrom threads
- 2 large red snapper filets
- 1 tespoon olive oil

Preheat oven to 400 degrees. Combine the first 7 ingredients in a 9-inch square baking dish. Bake 15 minutes.

Top hot tomato mixture with snapper. Brush snapper with oil. Season with salt and pepper. Cover and bake until fish is cooked through (about 20 minutes).
