Blueberry-Peach Bliss
ingredients
- In bowl, combine 1/2 cup brown sugar, 1/4 cup cornstarch, and 1/2 tsp salt. Stir in 2 1/2 lbs ripe peaches, peeled, pitted and sliced; 1 cup blueberries and 1/4 cup brandy. Spoon into refrigerated pie crust. Use second pie crust to make top crust of pie. Fold bottom crust over edges and crimp. In bowl, whisk together1 egg and 2 T water. Brush pie with egg mixture. Place pie on cookie sheet and bake 15 mins at 400 degrees, then reduce temp to 350 and bake 45 mins more.
