3 Cheese Manicotti

ingredients

  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 tbsp oil
  • 1 can tomatoes (16 oz)
  • 1 can tomato sauce (8 oz)
  • 1 tsp sugar
  • 1 1/2 cup ricotta cheese
  • 1/4 cup snipped parsley
  • 1 tsp oregano
  • 1/4 tsp thyme
  • 1 bay leaf
  • 2 eggs (beaten)
  • 8 manicotti shells
  • 2 cup mozzarella cheese
  • 1/2 cup Parmesan
  • 1/2 tsp oregano

    SAUCE: In saucepan cook onion and garlic in hot oil until tender. Add undrained tomato and tomato sauce, sugar, 1 tsp oregano, thyme and bay leaf. Simmer until thick (25 mins). Remove from heat. Discard bay leaf.

    Cook manicotti. Drain and rinse in cold water.

    FILLING: In bowl stir together eggs, 1/2 of mozzarella cheese, ricotta, Parmesan, parsley, 1/2 tsp oregano and dash of pepper. Spoon filling into manicotti without tearing it. Pour 1/2 of the sauce into a 2 quart rectangular pan, arrange manicotti in pan. Pour remaining sauce into shells. Sprinkle the remaining mozzarella cheese on top. Cover and bake at 350 degrees for about 30-35 minutes. Serve warm.
