Chicken Curry
ingredients
- 2 large onions
- 4 cloves garlic
- 1 tsp turmeric
- 1 tsp ginger
- 2 tsp coriander
- 1 tsp cumin
- 1 tsp chilli
- 1 tsp paprika
- 1 2 1/2 lb. chicken, cut into pieces
- 8 tbsp ghee or butter
- 2 bay leaves
- 1 cinnamon stick (small)
- 1 cardamon (large)
- salt to taste
- 1/2 cup greek yogurt
directions
Slice 1 onion finely. Grind the other onion with the garlic to make a paste. Add this paste to the turmeric, ginger, coriander, cumin, chilli and paprika. Cut the chicken into pieces. Heat the ghee and fry the onion until golden brown. Lower the heat , add the bay leaves, cinnamon and cardamon and fry 1 minute. Add the paste, chicken and salt and fry for 3 minutes. Beat the yogurt and add to the curry. Bring to a boil and simmer very gently until almost ready. Remove the lid and fry until a rich brown color and the chicken is tender. If the chicken is not tender a little hot water may be added while cooking.
