Mom's Tiramisu
ingredients
- 250gr of Ricotta
- 150gr of Cream Cheese
- 250gr of Mascarpone
- 3/4 – 1 cup of sugar
- 4 Egg Yolks
- 4 Egg Whites
- A pinch of salt
- Lady Finger cookies (Vicenzi or Savoiardi )
- 1 pot of strong Espresso coffee
- Optional: Grand Marinier or other liquor to taste
- Spices: Cocoa powder, (optional: cinnamon & nutmeg)

Beat & Mix Egg yolks w Sugar

Gradually mix in Ricotta, Cream Cheese, and Mascarpone

Add Liquor

Separately, whisk the Egg whites till fluffy (add a pinch of salt to stiffen the fluff)

Gradually fold whisked egg whites into the Egg yolk mix.

.....Set the batter aside...

Step 1. One by one - Dip the Lady fingers into Espresso coffee and lay your bottom layer in a rectangular or square pan.

Step 2. Add a layer of the batter to cover the Lady fingers.

Repeat Step 1 & 2 till height is obtained (2 or 3 layers)

Sprinkle Last & Top layer of batter w Cacao powder (optional: lightly sprinkle Cinnamon and Nutmeg if desired

Refrigerate for 3hrs before serving (could be prepared the day before)
