Mom's Tiramisu

ingredients

  • 250gr of Ricotta
  • 150gr of Cream Cheese
  • 250gr of Mascarpone
  • 3/4 – 1 cup of sugar
  • 4 Egg Yolks
  • 4 Egg Whites
  • A pinch of salt
  • Lady Finger cookies (Vicenzi or Savoiardi )
  • 1 pot of strong Espresso coffee
  • Optional: Grand Marinier or other liquor to taste
  • Spices: Cocoa powder, (optional: cinnamon & nutmeg)

    Beat & Mix Egg yolks w Sugar

    Gradually mix in Ricotta, Cream Cheese, and Mascarpone

    Add Liquor

    Separately, whisk the Egg whites till fluffy (add a pinch of salt to stiffen the fluff)

    Gradually fold whisked egg whites into the Egg yolk mix.

    .....Set the batter aside...

    Step 1. One by one - Dip the Lady fingers into Espresso coffee and lay your bottom layer in a rectangular or square pan.

    Step 2. Add a layer of the batter to cover the Lady fingers.

    Repeat Step 1 & 2 till height is obtained (2 or 3 layers)

    Sprinkle Last & Top layer of batter w Cacao powder (optional: lightly sprinkle Cinnamon and Nutmeg if desired

  • 11

    Refrigerate for 3hrs before serving (could be prepared the day before)
