  • 3/4 cup butter
  • 2 egg whites at room temperature
  • 1 c. sugar
  • 1 TBS. cinnamon
  • 1/2 tsp. salt if nuts are unsalted
  • 5 cups mixed nuts

Line a jelly roll pan with foil. Heat oven to 325 degrees. Place butter in pan and melt in oven while it is heating. In a large bowl at high speed beat egg whites until foamy. Gradually add sugar until stiff peaks form. Beat in cinnamon and salt. fold in nuts. Spread nuts over melted butter in pan and bake 30 minutes stirring 3 or 4 times. Cool nuts in pan on a wire rack 5 minutes. Transfer to wax paper. Store in airtight container.
