Cheesy Ham and Grits Casserole
ingredients
- 2 cups whole or 2% milk
- 1 cup water
- 1 teaspoon salt (If you use country ham, salt is not needed)
- 3/4 cup quick cooking grits
- 1/4 cup unsalted butter
- 2 cups shredded mild cheddar cheese
- 2 cups diced ham (1/2 inch diced)
- 8 large eggs

Coat a 13 x 9 inch baking dish with nonstick cooking spray

In a 3 quart sauce pan, bring milk, water and salt to boil. Add grits and stir until they thicken and begin to boil

Remove from heat and transfer to a large bowl. Stir in butter, cheese, ham and eggs, then transfer to prepared dish.

Preheat oven to 350 degrees. Bake casserole until puffed and golden brown, about 45 minutes
