Summer Squash Gratin
Fabulous after a farmers market run!
ingredients
- Olive oil
- Onion, chopped
- 2 cloves garlic
- 2-3 yellow summer squash
- 1 red pepper (add green, yellow, or orange for color!)
- 2 T fresh parsley, chopped
- 2 eggs
- 1/2 t. salt
- Ground pepper
- 1/2 c. milk
- 1 c. Arborio rice
- 1/4 c. white wine (optional)
- 2-3 c. chicken broth
- 1 t. thyme
- 1/2 c. Gruyere
- 1/4 c. Parmesan

1. Preheat oven to 375 degrees.

2. Saute onion and cook until tender.

3. Meanwhile, cook arborio rice in separate pan (using chicken broth and white wine).

3. Add garlic, squash, and bell peppers. Season with salt and pepper. Cook for 10 minutes. Add parsley.

4. In medium bowl, beat together eggs, salt, pepper, milk. Stir in rice, thyme, sautéed veggies, and cheese.

5. Place in baking dish. Bake for 35-40 minutes until browned on top and edges.
