Rainbow Seafood Stir-Fry
Really easy and beautiful to look at.
ingredients
- 1 pound fresh spinach
- 2 medium bell peppers (red & yellow preferred)
- 1 clove garlic or shallot
- 2 Tablespoons vegetable or olive oil
- 1 1/2 pound scallops (or peeled raw shrimp, fresh crabmeat or tuna in chunks)
- 1 Tablespoon lemon juice
- 1/2 tsp. salt
- 1/8 tsp. crushed red pepper
- Rice or noodles

Cut & wash spinach..coarsely chop

Core, seed and coarsely chop bell peppers

Chop garlic

Heat oil over medium heat, cook peppers 3 to 4 minutes until crisp tender
- 5
Add garlic, seafood and lemon juice, cook 4 to 5 minutes until seafood is opaque in center
- 6
Gradually stir in spinach until wilted...season with salt and crushed pepper
- 7
Serve over hot white rice or noodles
