Caperberry Relish

ingredients

  • 3/4-1 jar of caperberries, sliced thinly crosswise (See Note*)
  • few sprigs of mint, finely chopped
  • small handful of Italian parsely, leaves and tender stems finely chopped
  • red wine vinegar
  • extra-virgin olive oil
  • pepper

directions

In a bowl, add the sliced caperberries (without brine), mint, parsely and garlic. Add a splash of vinegar, a few glugs of olive oil, and pepper. (Salt is not necessary, as the caperberry brine is already salty.) Serve on top of toasted bread and enjoy.

notes

*Note: Caperberries are not the same as capers, and have different flavor. Caperberries are approximately the size of a grape and can be found in specialty food stores.
