Top Chef Watermelon Salad
ingredients
- 1/3 C balsamic vinegar
- 1 1/2 tbsp honey
- 4 C watermelon, seeded and cubed
- 1/4 C olive oil
- 1 C feta cheese, crumbled
- Arugula
- salt and pepper

In a small saucepan, mix balsamic vinegar and honey; simmer and reduce until syrupy, 5 to 7 minutes. Let cool.

Toss watermelon with arugula; drizzle with vinegar reduction and 3/4 C olive oil. Season with salt and pepper. Top with feta.
