Rock Hall Quiche
A light and fluffy quiche that needs no crust.
ingredients
- 1/2 lb thinly sliced mushrooms
- 3 tbs butter
- 4 large eggs
- 1 cup sour cream
- 1 cup cottage cheese
- 1/2 cup grated parmesan cheese
- Pinch of salt & pepper
- 4 tbs flour
- 1 tsp onion powder
- 2 cups shredded Monterey Jack cheese
- Add any one or more of the following to make YOUR quiche unique:
- 6 oz. crabmeat
- 1/2 lb browned sausage
- 4-6 slices cooked bacon
- 1 cup chopped spinach drained well

Preheat oven to 350° - Saute muchrooms in butter and drain

Blend eggs, sour cream, cottage cheese, In large bowl combine Jack cheese and mushrooms. Pour blended mixture into large bowl over cheese/mushrooms and stir until well combined.

Spray 9" deep quiche pan or 8 individual tartlettes with cooking spray and fill with quiche misture

Bake 40-45 minutes for quiche pan and 20-25 minutes for tartlettes until puffed and golden.

Cool 5 minutes. Serve while hot.

Garnish with orange and red pepper slices, parsley or a slice of fresh orange!
