Cranberry Apple Cobbler
What is Fall in New England without “cramberries” as your brother-in-law would say. (Only he thinks that’s funny...)
ingredients
- 1 1/2 cups fresh cranberries
- 3 tart apples, peeled and sliced into cubes
- 1 T. grated orange zest
- 1/2 cup light brown sugar
- 1/4 tsp. cinnamon
- pinch of ground cloves
- FOR THE TOPPING:
- 1/2 cup flour
- 1 T. butter, cut in small pieces
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 T. shortening (or canola oil)
- 1/3 cup vanilla-flavored yogurt
- 1/2 tsp. sugar

Preheat oven to 400 degrees.

In a shallow baking dish, toss together the cranberries, apple, orange zest, brown sugar, cinnamon, cloves and 1 T. of flour. Dot the top with butter.

In a food processor, mix together the 1/2 cup of flour, baking powder and salt and pulse a few times to combine. Add the shortening (or oil) and blend with 4-5 short bursts until well crumbled. Remove the mixture from the processor into a separate bowl and stir in the yogurt. Dough will be sticky.

Drop the dough by spoonfuls onto the cranberry/apple mixture, then sprinkle with a little sugar. Bake in the preheated oven for 25-30 minutes until topping is golden brown. Serve warm.
