This is the ultimate comfort food. My dad would pile it high with whipped cream. I liked it warm with cinnamon.

  • 1 quart of milk
  • 1/4 teaspoon salt
  • 1/2 cup long grain rice
  • 1 small can evaporated milk, add enough water to bring it up to 1 cup total
  • 2 eggs slightly beaten
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • Cinnamon

directions

  • 1

In a heavy saucepan cook the milk and salt until slightly heated.

  • 2

Stir in the rice and bring to a boil.

  • 3

Lower the eat and simmer for 25 minutes, stirring occasionally.

  • 4

Check to see if rice is done, if not cook until rice is soft.

  • 5

Add 1/4 of the evaporated milk and cook 5 more minutes.

  • 6

In a mixing bowl combine eggs, sugar, and the remaining 3/4 cup evaporated milk; stir in some of the rice mixture.

notes

Take care and read the recipe first. Follow the order or you will end up with scrambled eggs in your rice. Take care not to let the milk burn.
