Great for breakfast, snack or with a meal

ingredients

  • 4 c sugar
  • 1 c butter
  • 6 large eggs
  • 3 c cooked, mashed pumpkin
  • 1 c water
  • 5 c flour
  • 1 tsp baking powder
  • 1 T baking soda
  • 1/2 tsp ground cloves
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 c chopped nuts
  • 1 c raisins

directions

Cream sugar and butter until light. Add eggs and beat thoroughly. Stir in pumpkin and water and blend. Sift dry ingredients together and carefully fold them into the liquid ingredients, mixing just until dry ingredients are thoroughly moistened. Add nuts and raisins. Pour into 3 well-buttered loaf pans and set aside for 15 minutes. Bake in a 350 oven for 1 hour. Cool on rack.

Use a very large bowl. This makes a lot.
