One of mom’s favorite deserts!
- 1 tbs. flour
- 1/2 cup sugar
- 1 tsp. salt
- 2 egg whites at room temperature
- 1/2 tsp. vanilla extract
- 2 cups flaked coconut
- candied cherry halves
Preheat oven to 325. Lightly grease and flour 2 cookie sheets, set aside.
In small bowl combine flour, sugar, and salt. Mix well and set aside. In large bowl beat egg whites until stiff but not dry. Beat in vanilla. Fold in dry ingredients, then coconut.
Drop by rounded teaspoons onto cookie sheet 2" apart. Press candied cherry half into center of each. Bake 20-25 minutes or until golden brown. Cool completely. Makes about 2 dozen.
