Chicken Cornbread Dressing
ingredients
- Cornbread:
- 1 1/3 cup yellow cornmeal, self rising
- 1 1/4 cup self rising flour
- 2 tsp. sugar
- 1 2/3 cup milk
- 4 tbsp. oil
- 2-3 eggs
- Dressing:
- Rich Broth
- 1 small onion
- Black Pepper

Combine meal, flour, and sugar. Beat eggs, milk, and oil together. Add to dry ingredients, pour into greased 10" iron skillet or baking pan. Bake at 425 degrees for about 25 minutes.

A Hen boiled makes the best broth. If using a fryer or parts, add 1 or 2 bouillon cubes or you can use canned broth. Crumble cornbread up, mis with chopped onion and enough broth to make mixture on the soupy side. Add pepper and salt if needed to taste.
