Fresh Gingerbread
Serve with whipped cream or vanilla ice cream
ingredients
Dry Ingredients- 3/4 cup white pastry flour or all purpose flour
- 3/4 cup whole wheat pastry flour
- 1 tsp baking powder
- 3/4 tsp cinnamon freshly ground
- 1/4 tsp grated nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 1/4 tsp mustard powder
- pinch of cayenne
- pinch of black pepper
- 1/4 cup better
- 1/4 cup brown sugar
- 3 TB freshly grated ginger
- 1/2 cup molasses
- 1/2 tsp baking soda
- 3/4 cup boiling water
- 1/4 tsp baking soda
directions
Cream butter and brown sugar and add ginger. Beat molasses and 1/2 tsp baking soda until color lightens and little bubbles form. Combine with boiling water and 1/4 tsp baking soda. Add dry ingredients. When this is finished, fold in beaten eggs. Pour into a thoroughly buttered and floured 8 inch cake pan. Bake for 30 minutes in a 350° oven or until toothpick comes out clean.
