Best Ever-Banana Bread
ingredients
- 2 ripe medium bananas, mashed
- 2 eggs
- 1 3/4 C. unsifted all-purpose flour
- 1 C. sugar
- 1 C. chopped pecans or walnuts, leaving a few nuts whole
- 1/2 C. vegetable oil
- 1/4 C. + 1 Tbl buttermilk*
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp salt

Preheat oven to 325.

Grease and flour a 9 x 5" inch loaf pan.

Combine all ingredients in a large bowl and mix well with electric (hand) mixer

Transfer to prepared pan; add the reserved whole nuts over top

Bake until top is golden brown and splits slightly, about 1 hr. and 20 minutes.

* Buttermilk substitution: Add 1 Tbl. lemon juice to 1 C. milk and let stand at room temperature for 30 minutes Do not double recipe Can be frozen
