Smoked Salmon Cream with Crudités

ingredients

  • 1 lb cream cheese, room temperature
  • 1/2 c whipping cream
  • 2 green onions, chopped
  • 1/4 c minced fresh parsley
  • 2 T minced fresh dill or 2 tsp dried
  • 2 tsp fresh lemon juice
  • 1 garlic clove, minced
  • Dash of Tabasco sauce
  • Salt and freshly ground pepper
  • 8 oz. smoked salmon or lox trimmings, shredded
  • 1/4 c salmon caviar or 1 small tomato, peeled, seeded and chopped
  • Assorted vegetables such as cucumber slices, carrot sticks, celery pieces
  • Cocktail rye or pumpernickel bread

directions

Beat the cream cheese and cream in large bowl until smooth. Stir in green onions, parsley, dill, lemon juice, garlic and hot pepper sauce. Season with salt and pepper. Fold in smoked salmon. (Can be prepared 1 day ahead. Cover with plastic wrap and refrigerate. Bring to room temperature before serving.) Garnish with caviar or tomato. Serve with vegetables and bread.
