Spinach and artichoke dip

ingredients

  • 1 white onion chopped
  • 1 stick of butter
  • 3 toes of garlic , minced (I put in a lot of garlic
  • (2) 10 oz. box of frozen spinach, drained
  • 4 oz. cream cheese, cut up (I put in 16 oz in it)
  • (1) 8 oz. sour cream container
  • 1 can of artichoke, drained and chopped (I don’t put this in there)
  • 1 3/4 cup of Parmesan cheese (I put in a whole jar of this cheese, I don’t measure)
  • 1 8 oz. Monterrey Jack cheese, grated
  • 1 bag of tortilla chips

    Preheat the oven at 350 degrees

    Cook spinach in microwave (follow box directions). After spinach is cooked, place in colander and drain well.

    While cooking spinach, chop onion, garlic, artichoke, and cream cheese.

    Melt butter in a large skillet, saute onions and stir in garlic.

    Add spinach, cream cheese, sour cream, and artichoke.

    Remove from heat. Add Parmesan cheese. Add salt and pepper for more taste.

    Place the mixture in a shallow dish (glass casserole dish) and top with grated Monterrey Jack cheese.

    Heat in oven until cheese is completely melted.

    Serve with chips.
