Loey's Banananana Bread

ingredients
- 1 3/4 cups flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1 1/2 sticks butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 1/4 cup buttermilk
- 1 tsp vanilla
- 3-4 (or 5 or 6) thawed frozen bananas and their juice
- 1 cup chopped nuts, whatever kind you like
- couple hands full of coconut, optional
- grated orange or lemon peel, optional

Note: If you don’t have buttermilk, you can add a big blob of sour cream. If you don’t have sour cream or buttermilk, you can use 1/4 cup of regular milk with 1 Tbsp of white vinegar. I have also added frozen juice concentrate or juice or wine or whatever. If you don’t have any of this stuff, add 1/2 cup of beer and drink the rest....

Preheat oven to 350 degrees.

Mix together flour, salt and soda. Set aside.

Cream together butter, sugar, eggs, buttermilk, vanilla and banana. Stir in remaining ingredients, if using.

Pour into ungreased pan/pans. Bake at 350 degrees for 40-60 minutes, depending on size of pans and your oven. Check every 5 minutes after 40 to see if toothpick comes out clean.
