Flounder with Spinach and Feta

ingredients

  • 1 lb skinless flounder fllets
  • 4 cloves garlic minced
  • 4 tsp olive oil
  • 3 cups sliced mushrooms
  • 1 1/2 tsp dried Italian seasoning crushed
  • 8 cups torn fresh spinach or baby spinach
  • 1/4 cup crumbled feta cheese (1 oz.)
  • 1/2 cup chopped fresh tomatoes (optional)

    Preheat oven to 450°

    Lightly coat 2 quart baking dish with spray.

    Measure thickness of the fish. Sprinkle with salt and pepper.

    Place large fillets in a single layer, tucking under thin edges. Arrange small fillets evenly in baking dish, overlapping as needed.

    In a large skillet, cook garlic in hot oil for 15 seconds. Add mushrooms and Italian seasonings . Cook and stir until mushrooms are tender.

    Stir in spinach. Cook and stir until wilted.

    Spoon down center of fish in baking dish.

  • 8

    Cover with foil. Bake until fish flakes easily when tested with fork. (Allow 6-8 minutes per 1/2 “ of thickness.)

  • 9

    Transfer fish and vegetables to a serving platter. Sprinkle with cheese and top with tomatoes.
