Red Skinned Mashed Potatoes
A Christmas favorite in our household. But then again almost anything is a favorite to most people when you add cream cheese to it. Try this recipe and maybe it will become an any day favorite in your household.
ingredients
- 10 Red Skinned Potatoes*
- 8 oz package of Cream Cheese, softened
- 1/2 pint half and half**
- Salt
- Pepper

1-Scrub potatoes thoroughly. Cut Potatoes into quarters and place in a large stock pot. Fill pot with hot water and place on stove, cover pot with lid.

2-Heat potatoes on high heat until water comes to a rolling boil, then slightly turn down heat. Boil potatoes for 10-15 minutes or until very tender. Drain potatoes.

3-In a large bowl, roughly mash potatoes with a hand masher. Add cream cheese and blend with an electric mixer until thouroughly combined.

4-Add half and half until potatoes are at the desired consistency.*** Season potaoes with salt and pepper to taste.

*Potatoes should be about the size of your fist or slightly smaller, without bruises or bad blemishes. **can use cream instead. ***Potatoes thicken as they cool
