Vegetable Bake

ingredients

  • 3/4 lbs of potatoes, thinly sliced
  • 1/2 stick butter, melted
  • 1.5 to 2 tsp chopped fresh thyme
  • 3/8 tsp salt and pepper
  • 2 each: squash, zucchini thinly sliced
  • 1 C. tomato sauce
  • 1/2 C. parmesan cheese

directions

  • 1

    Heat oven to 400 degrees. Spray a shallow 1.5 qt baking dish.

  • 2

    Coat potatoes with 1/3 each butter and thyme.

  • 3

    Season with 1/8 t. salt and pepper and place in bottom of dish.

  • 4

    Coat yellow squash with 1/2 the remaining butter and thyme. Press on to potatoes.

  • 5

    Coat zucchini with remaining and press into squash

  • 6

    Cover with foil

  • 7

    Bake 1 hour or until veggies are crisp

  • 8

    Remove foil and sprinkle with cheese. Bake an additional 10 minutes
