Vegetable Bake
ingredients
- 3/4 lbs of potatoes, thinly sliced
- 1/2 stick butter, melted
- 1.5 to 2 tsp chopped fresh thyme
- 3/8 tsp salt and pepper
- 2 each: squash, zucchini thinly sliced
- 1 C. tomato sauce
- 1/2 C. parmesan cheese

Heat oven to 400 degrees. Spray a shallow 1.5 qt baking dish.

Coat potatoes with 1/3 each butter and thyme.

Season with 1/8 t. salt and pepper and place in bottom of dish.

Coat yellow squash with 1/2 the remaining butter and thyme. Press on to potatoes.

Coat zucchini with remaining and press into squash

Cover with foil

Bake 1 hour or until veggies are crisp

Remove foil and sprinkle with cheese. Bake an additional 10 minutes
