Mixed Vegetable Curry

An Indian-style curry that is easy to make and healthy for you too. Goes great with rice and Naan Bread.*
ingredients
- 3 TBSP vegetable oil
- 1 Onion
- 1 tsp ground cumin
- 1 tsp chile powder
- 2 tsp ground coriander
- 1 tsp ground turmeric***
- 8 oz potatoes, diced
- 6 oz cauliflower, broken into flowerets
- 4 oz green beans, sliced
- 6 oz carrots, diced
- 4 tomatoes, peeled and chopped
- 1 1/4 cup hot vegetable stock

1-Heat oil in large saucepan, add onion and cook for 5 minutes until softened.

2-Stir in cumin, chile powder, coriander and tumeraic. Cook 2 minutes.

3-Add potatoes, cauliflower, green beans and carrots, tossing them in the spices until coated.

4-Add Tomatoes and stock and cover. Bring to a boil, then reduce heat and simmer 10-12 minutes or until vegetables are tender. Serve hot with rice.
notes
Cook's Note: use any mixture of vegetables to make a total of 11/2 pounds. *Turmeric is apart of the Ginger family. If you can't find this spice you may use curry powder. BUT the powder will change the flavor of the dish. ***You may use tortilla's or pita
