Potato and Pepper Frittata

ingredients

  • 1 tbls. oil
  • 2 cups frozen hash browns
  • 1 bunch scallions, sliced
  • 1 red bell pepper, chopped
  • 3/4 tsp. salt
  • 1/4 cup chopped parsley
  • 2 cups egg beaters
  • 1/2 cup low fat cheese
  • 1 tbls. parmesan
  • 1/2 tsp. pepper

directions

Heat oil in a medium nonstick skillet over medium heat. Add the hashbrowns, scallions, pepper, and salt. Cook, stirring frequently until the vegetables are tender and golden. Stir in the parsley. Meanwhile, spray a skillet with pam and heat. Add eggs and cook until set. Spoon mixture over eggs. Sprinkle with cheese and cover until cheese melts.
