Wild Rice with Walnuts & Dates
ingredients
- 4 stalks celery, chopped
- 1 small onion, chopped (1/4 cup)
- 1 tablespoon butter
- 1 cup wild rice, rinsed and drained
- 1-14 ounce can beef broth
- 1 cup water
- 1/3 cup pitted whole dates, snipped
- 1/4 cup chopped walnuts, toasted
directions
In a 10" skillet cook celery and onion in hot butter about 10 minutes or until tender. Add uncooked wild rice; cook and stir for 3 minutes. Add broth and water. Bring to a boil; reduce heat. Cover and simmer for 50-60 minutes. Stir in dates and walnuts. Cook, uncovered 3-4 minutes
