Tangy Bean Dip
Quick and easy recipe, this keeps well in the refrigerator and provides an excellent source of protein.
ingredients
- 2 cups Cannellini beans
- 2 cloves garlic
- 1/4 cup lemon juice
- 1/4 cup extra virgin olive oil
- 3/4 tsp. salt
- fresh herbs of choice (parsley, thyme, etc.)
directions
Puree all ingredients together in a food processor. Mix in fresh chopped herbs such as parsley, rosemary or thyme, if you desire. Serve on toasted pita triangles.
